This course provides you with the skills and expertise to become a fully qualified cook. You will learn supervisory skills to allow you to provide technical advice and support to a team.

Graduates are equipped to work in various hospitality enterprises where food is prepared and served, including restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.
 
The qualification is suitable for an Australian apprenticeship pathway (Australian citizens only).


Students may choose to study this course:
  • full-time or part-time (non-apprentice)
  • part-time as the formal training component of a cookery apprenticeship
Both delivery modes give students sound practical skills by providing input into Swinburne's training restaurants. On completion of the course, students are recognised as a fully qualified cook.

Employment as a cook or further study into the Certificate IV Hospitality or Diploma of Hospitality Management.  
 
Individuals with this qualification are able to perform roles such as:
  • preparing appetisers, salads, stocks, sauces and soups
  • preparing vegetables, fruit, eggs and farinaceous dishes
  • selecting, preparing and cooking poultry, seafood and meat
  • preparing hot and cold desserts, pastries, cakes and yeast goods
  • planning and preparing food for buffets

Satisfactory completion of the Swinburne College English for Academic Purposes Upper Intermediate level certificate at the Pathways level (EAP 4: Pathways -60%); OR, obtaining a minimum IELTS overall band of 5.5 (Academic Module) with no individual band below 5.0; OR, a TOEFL (Paper-based) minimum score of 527 (with a Test of Written English (TWE) score of 4.5); OR, a TOEFL Computer-based) minimum score of 196 (with Written Writing score of 4.5); OR, a TOEFL (Internet-based) minimum score of 71 with no band less than 18.
