Certificate II in Hospitality (Kitchen Operations)

This qualification provides the skills and knowledge for an individual to be competent in a range of kitchen functions and activities that require the application of a limited range of practical skills in a defined context. Graduates can apply these skills in various hospitality enterprises where food is prepared and served, including restaurants, hotels, catering operations, clubs, pubs, cafes, cafeterias and coffee shops.
 
The qualification is suitable for an Australian apprenticeship pathway and for VET in Schools delivery. Valuable experience in cooking for the general public is gained through working at Swinburne's modern training restaurants and/or practical work placements.

This course is conducted on-campus and is also available as a work-based traineeship (six months duration).
 
Applicants may also be eligible to undertake this course as a pre-apprenticeship program with practical placement and employment assistance.
On successful completion of the Certificate II students can enter an apprenticeship to complete the Certificate III in Hospitality (Commercial Cookery) or a certificate course in other hospitality streams.

Individuals with this qualification are able to perform roles such as:
  • preparing breakfast items
  • preparing a range of fast food items
  • preparing a range of non-alcoholic drinks
  • preparing sandwiches
  • preparing appetisers and salads
  • preparing hot and cold desserts
Possible job titles include:
  • breakfast cook
  • short order cook
  • fast food cook

Satisfactory completion of an appropriate Victorian Year 11 or its equivalent, or mature age.
 
Applicants who have completed VET in schools will receive advanced standing.
 
Students satisfying age requirements may also undertake this course as a pre-apprenticeship program.

An advanced credit transfer system, known as the Pathways program, is in place at Swinburne. Through Pathways, students with one or more of a wide range of post-secondary qualifications (both local and international) can gain entry into a course with advanced standing. Certain unit requirements must be met and an acceptable standard of results achieved in order to gain admission and for maximum credit to be granted. Recognition of Prior Learning (RPL) is a process where a student may be granted credit or partial credit towards a qualification in recognition of skills and knowledge gained through work experience, life experience and/or formal training.
